Hi everyone, I've got a new delicious recipe that I adapted from a jicama, papaya, mango salad. Right now is a great time to make this as most of the ingredients came be found in your backyard garden or your local farmer market. 

Ingredients-  4 medium kohlrabi; 3 cups watermelon; 3 cups cantaloupe; 1 small onion(or shallot); 1 tablespoon (chopped)mint; 1 tablespoon (chopped) cilantro; 4 cups spinach(or substitute salad mix during summer when spinach is not in season); 1/3rd cup lime juice;  2 tablespoon olive oil; 1/8tsp cayenne pepper

Directions - 1. Remove green skin from kohlrabi, and julienne using a mandoline or slice thinly by hand. 2. Cube watermelon and cantaloupe into 1/2 to 3/4" cubes. 3. Finely chop onion 4. Place kohlrabi, watermelon, cantaloupe, onion, mint, cilantro into a large bowl and set aside. 5. Whisk together lime juice, olive oil, and cayenne and pour over the fruit. 6. Toss very gently and serve over a bed of baby spinach 7. Top with microgreens if desired and then enjoy.
